Simple and delicious, serve with bangers and mash and a good Irish Stout.

Ingredients:
4 cups all-purpose flour
4 tablespoons white sugar
1 teaspoon baking soda
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup margarine, softened
1 cup buttermilk
1 egg
1/4 cup butter, melted
1/4 cup buttermilk

Directions:
Preheat oven to 375 degrees F. Lightly grease a large baking sheet.
In a large bowl, mix together flour, sugar, baking soda, baking powder, salt and margarine.
Stir in 1 cup of buttermilk and egg.
Turn dough out onto a lightly floured surface and knead slightly.
Form dough into a round and place on prepared baking sheet.
In a small bowl, combine melted butter with 1/4 cup buttermilk; brush loaf with this mixture.
Use a sharp knife to cut an ‘X’ into the top of the loaf.
Bake in preheated oven for 45 to 50 minutes, or until a toothpick inserted into the center of the loaf comes out clean, about 30 to 50 minutes.
You may continue to brush the loaf with the butter mixture while it bakes.

In New Mexico, Fry bread can be purchased fresh and hot at roadside stands near resevations. But you can make it at home.

Ingredients:

3 cups unbleached flour
1 Tbsp. baking powder
1 Tsp. salt
1 1/2 cups “warm” water

Mix the flour, salt, and baking powder together in a bowl. Sift or stir this together.
Add the “warm” water to this mixture and stir until all the dry ingredients are mixed well.
Put oil on your hands; remove dough from bowl and knead until the dough is smooth.
When the dough is smooth & soft, rub oil over the top of your dough.
Place back into the bowl, cover with a dry cloth & let rest for 30 minutes.
Begin heating your lard, oil, or grease so it is very hot.
To cook, pull off pieces of the dough and roll into a ball. Pull the dough at its edges until you have small circles.
Drop circles into the hot grease until golden brown, then turn over until golden brown on the other side.
Add enough grease/oil so the dough can deep fry.
The bread is done when it is golden brown.
Drizzle with honey.
This is a staple for feasts after sweats, at Pow Wow, an Honor dinner or any cultural gathering.
