Slow Cooker Corned Beef & Cabbage

This recipe has lots of “wiggle room”. More or less of any of the ingredients as you desire will still turn out fine. That’s the beauty of using the slowcooker.

Ingredients:

4+large carrots, cut into 2-3″ pieces

1/2lbs small red new potatoes, halved

3-4 lb. corned beef brisket

1 tsp. thyme

2-3 medium onions, quartered

1 cup water, apple cider, or beer

1/2 bunch parsley

1 small head cabbage, cut into wedges

Use the seasoning packet that comes with the corned beef if desired

 

Directions:

Sprinkle corned beef with thyme.

Place all ingredients except cabbage wedges into crock pot in the order listed above.

Cook on low for 8 hours, or high for 5 hours.

Add cabbage wedges, turn to high and cook for an additional 2 hours.

Best served with Guinness Stout.
