I prefer jasmine rice.<br \/>\n1 lg. green pepper, chopped<br \/>\n1 lg. tomato, chopped<br \/>\n1\/4 tsp. chili powder<br \/>\nsalt &amp; pepper to taste<br \/>\na pinch of cumin powder<br \/>\nTo prepare:<br \/>\nMelt the fat or butter in the frying pan and cook the onion until soft.<br \/>\nAdd the rice and gently saute until lightly browned.<br \/>\nAdd 3 cups boiling water or stock, (carefully!)<br \/>\nAdd the peppers, tomoatoes, and seasonings, stir well, cover and cook over low heat until the rice is tender, about 30-40 minutes.<br \/>\nAdjust the seasonings and served topped with some grated cheese.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This is the best basic spanish rice recipe I&#8217;ve ever used.
